April Jackson is known as a Chef, Restaurateur and Former Miss Jamaica Universe, with experience spanning food, hospitality, wellbeing and entrepreneurship. Becoming Miss Jamaica Universe in 2008 was the beginning of this journey. A couple years after graduating from Columbia University, a year ahead of schedule, I opened my first restaurant (Three Little Birds) with zero prior experience in hospitality. This leap of faith marked the start of a thriving career in the culinary world. As a proud mother of young twins, I expertly juggled the demands of motherhood with my professional commitments, whilst completely a law degree. My unique ability to balance these roles showcases my dedication, resilience, and unwavering work ethic.
